SCANPAN® Green Tek Non-Stick Cookware
In early 2007 a Denmark company, SCANPAN®, introduced the first SCANPAN® Professional Cookware to the United States. A patented ceramic-titanium technology is used by SCANPAN® to create the first certified PFOA-free (perfluoraoctanoic acid) non-stick ceramic-titanium cooking surface. The Green Tek process used that SCANPAN® cookware is completely PFOA free at all stages of the manufacturing process and all their cookware has always been PFOA-free.
The Professional SCANPAN® Cookware Series is classically modern in design and clean-up is a simple rinse and wipe to clean the surfaces. The cookware is created out of pressure-cast aluminum with an extra-thick core as the base so that heat is distributed evenly over the cooking surface. Only medium heat is required to achieve perfect recipes every time I put one on the burner.
The Core of the SCANPAN®
The simple idea behind the SCANPAN® Cookware technology is that the ceramic titanium is heated to 30,000°, when the molten titanium fuses to the product’s compressed aluminum core, and the non-stick coating is then applied and hardened. Since the aluminum is an excellent conductor of heat, it distributes the heat across the bottom and sides of the cookware, achieving an even distribution of heat.

Weight & Balance
These are not flimsy pots and pans, they have substantial weight and easy to maneuver. The handles have just the right balance and size for getting a good grip for tossing, draining or pouring foods into serving dishes.

The Look & Feel
The SCANPAN® Professional Cookware has polished 18/10 stainless steel handles on the sauté
pans that are cool to the touch when cooking. Lids have a two-tone matt and mirror finish. A dimple under the lid handles provided coolness and plenty of room to remove lids while boiling or frying without using a potholder. The exterior of each SCANPAN® is a flat-matte black and this means it will always look great and requires little maintenance.

1 quart and 3 quart saucepans with lids; 8" and 10¼" skillets; 10" sauté pan with lid; and 6 quart stockpot with lid. SCANPAN® says that metal utensils may be used, but I felt like my recipes stirred or flipped better when I used silicone or plastic utensils. Although the surface of SCANPAN® is non-stick, it has a non-stick matte finish that just feels better to me when I use non-metal utensils. It’s just a personal preference.

How to Care for the Professional SCANPAN®
Wash each pan and lid in warm soapy water and dry thoroughly.
Frying with Fat
Heat the SCANPAN® to the desired cooking temperature using medium heat then add the fat and then the food item.
Frying without Fat
Heat the SCANPAN® to the desired cooking temperature using medium heat then add your food item to pan fry.
Wash each SCANPAN® with warm soapy water. It is easiest to clean the SCANPAN® while it is still warm. Completely clean each SCANPAN® before it is put away.
IMPORTANT: Do not use oil from aerosol sprays, as this can impair your SCANPAN®’s non-stick coating.
Do not overheat the product as the aluminum is superior in retaining heat and high heat is unnecessary. High heat will reduce the non-stick performance. Overheating will not be covered under warranty. You should not use your SCANPAN® to store food.
Hopefully this will never happen, but it it does, here’s how to eliminate burn marks due to overheating or charring of fatty substances. Fill the SCANPAN® 3/4 full with water, bring to a slow boil, using medium heat, add a tablespoon of dishwashing liquid, simmer for 15 minutes, rinse and scrub with a Teflon Pan Sponge. You can then clean it in the normal way.
Signs of Wear
Some signs of wear and tear may become visible on the coating. This is normal and does not affect its non-stick qualities. SCANPAN® will not warp.
Misuse such as knife cuts and use of electrical equipments is NOT covered under warranty.
Dishwasher safe, but not recommended.
Can withstand oven heat up to 260°C (500°F).

Another Look at Non-Stick
I removed all non-stick pans from my kitchen over 10 years ago because of the PFOA and PTFE chemicals used in creating the non-stick surfaces. I felt that when the non-stick pans were heated, they would give off fumes and small particles would begin to loosen from the surface over time and get into my food.

Frying with little to no oil provides low calorie meals, but the look of searing with fat. I look like a professional when creating vegan crepes and clean-up is instantaneous. Sautéed mushrooms, stir-fries, mashed potatoes, and pot-stickers all cooked beautifully over medium heat with no hot spots in the SCANPAN® Professional Cookware.
