A Vegan Thanksgiving Menu
If you have vegan guests coming to your Thanksgiving or Christmas Dinner, here's a complete menu for the vegan portion of the meal. Vegans are inexpensive dinner guests and not difficult satisfy! The only thing difficult in my meal is the Mocking Egg Salad, but if you have already prepared the "yolk mixture" it will be fast and easy.
I've listed the menu items in the order that I make them for our Thanksgiving Dinner. The Organic Savory Herbed Stuffing will be ready just as you are finishing the Asparagus Sauté.
HINT: Make the Crustless Pumpkin Pie and whip the Soyatoo the day before and refrigerate it till serving time.
The Organic Savory Herbed Stuffing and the Raw Cranberry Relish both have better flavor if made the day before the dinner too.
