Fresh Pears for Poires au Chocolate

Poires au Chocolat or "Chocolate and Pears"

Succulent fresh pears and decadent chocolate, what could be better? Poires au Chocolat may be assembled well in advance of any holiday or event meal. Pears, chocolate chips, coconut oil, and raw cacao powder makes this “A Pear to Be Remembered!” Add a bit of Sweet Cashew Cream under it and dusted with raw cacao powder and you’ve created a gourmet dessert with little effort! Hands down, this will be a celebrated vegan dessert.


Ingredients
Jarrow Extra Virgin Coconut Oil

Tools

  • double boiler or a pan and bowl that sits well above the simmering water
    spatula
    tiny ladle with hooked top
    parchment paper
    cutting board
    plastic storage containers


Preparation

Heat the Water

In a sauce pan or double-boiler, add about two inches of water and bring to a simmer.
Remove the pan from the burner.

Melt the Chocolate

Pour the all the ingredients into a bowl that sits well above the simmered hot water.
Every few minutes give the mixture a stir to bring the melted portion to the top.

Keep stirring till the contents of the bowl is totally melted and smooth.

     Baby Pears

Pear Preparation

Choose pears that are ripe and have a good stem. Avoid any pears that show signs of shriveling around the stem.

Wash and fully dry up to 12 small pears.

I choose a red variety that was smaller than the Anjou Pears. They were softer and easier to cut in our dessert plates.

Trim Pear Bottoms to Sit FLAT

Trim a sliver of the bottom of each pear off so that each pear sits upright after the chocolate coating is applied. This cut will make it easier to store and transport the chocolate pears to a party.

The Cutting Board

Line a cutting board or cookie sheet with parchment paper.

Clear a shelf in your refrigerator large enough to receive the cutting board that will have the pears seated on it.

Melted Chocolate and Pears

Apply the Chocolate

While holding the pear by its stem over the bowl of melted chocolate, use a small ladle to drizzle the melted chocolate over the pear.

Gently wipe the bottom of the pear with a spatula and set onto the parchment paper.

Crushed Pistacho Nuts for Garnish of Poires au Chocolat
optional: Rotate the chocolate covered pear's bottom in freshly chopped green pistachio nuts (or nut of choice) for a snappy texture!

Six Poires au Chocolat

Repeat till all the pears are coated.

Refrigerate the Pears

Place the cutting board with the pears in the refrigerator till firm.

Once the chocolate if firm, place in individual or a large plastic container and keep refrigerated until 1 hour before serving.

Presentation

I like to place about 3 tablespoons of Whipped Vanilla Cashew Sweet Cream Dessert Topping in the middle of a shallow bowl, set the Poires au Chocolate in the middle of the topping pressing it down, and then dusting the top with raw cacao powder. Ooohs and aaahs with squeals of glee will fill the dining room! Serve with a dessert fork and knife. (Steak knives that you never use would work well with this dessert.)
