In a saucepan over medium high heat, combine the coconut milk, espresso coffee, sugar and freshly ground espresso coffee.
Stir the saucepan contents until bubbles begin to appear along the edges and all the sugar is melted.
Whisk the cornstarch and water in a glass or small bowl to form the slurry.
While whisking the saucepan’s contents over medium heat, drizzle the slurry mixture into the pan and bring the pan contents to a slow boil for about two or three minutes to completely incorporate and cook the cornstarch.
The contents of the pan will only thicken slightly, but you’ll want to cook the cornstarch to get it to bind with the coconut milk and sugar.
Run your fingers over the bean several times to squeeze every single seed out of the pod and into the ice cream batter. Replace the vanilla pod back into your vanilla jar to keep flavoring your vanilla.
The Kahlua Liqueur
Add the Kahlua Coffee Liqueur and whisk into the mixture. This is a mini-bar bottle of Kahlua Liqueur that works perfectly for about two recipe batches.
Whisk again to combine everything and pour into a container, cover, and chill for 24 hours to allow the flavors to develop.
Cover the Cuisinart ICE-100 Bucket with plastic wrap and refrigerate overnight.
HINT: You might be eager to freeze the cooled silky mixture NOW, but I guarantee that it will freeze and taste better if you refrigerate the mixture overnight!!!! This allows the flavor to BLOOM. It’s like pizza or spaghetti sauce tasting better the next day.
The next day, use a spatula and stir the cooled ice cream mixture to make sure the coffee grounds are not all settled at the bottom of the container.
Pour into your ice cream machine mixing bowl fitted with the paddle of choice and freeze according to the manufacturers directions.
Mini Ghirardelli Chocolate Chips give this Cappuccino Coconut Ice Cream a full flavor experience, but you have the option to omit these if you don’t want them added. Personally, I just think anything coffee is even better with bit of chocolate added.
