Lauren Ulm shares the secrets of creating Chicken-Styple Seitan seitan for this "Chicken-Fried Steak" recipe I made. Next time I'll make the patties much thinner since I did not realize the seitan dough swells excessively during the cooking process. I really want that crunchy exterior more than the soft insides! Regardless, these little "chicken-style seitan thighs" were FABULOUS! The crunchy exterior and soft moist interior made this taste and feel just like the real thing I grew up eating years ago! And the whole house smelled like "Southern-Fried!"

Lauren Ulm, "Lolo," is a vegan foodie and founder of veganyumyum.com who lives in Boston with her husband and two cats. She is not a chef, has never been to Lauren Ulm, author of Vegan Yum Yumculinary school, and she's not a professional photographer (but she has fun pretending!) When she went vegan in 2002, the kitchen became her favorite room in the house, and still is today. She has appeared on The Martha Stewart Show and has been featured in Vegetarian Times.
