RAW Cashew Sour Cream

RAW Cashew Sour Cream
Top my Gringo Vegan Tamales with Raw Cashew Sour Cream or add a bit to your favorite salad dressing to make it creamier. Drizzle some over your morning Scrambled Tofu Eggs or top off a plate of Nachos!

Ingredients

2 cups (16 ounces) raw cashews, soaked in filtered water overnight
4 tablespoons fresh lemon
1 teaspoon Eden Organic Unfiltered Apple Cider Vinegar
Eden Organic Unfiltered Apple Cider Vinegar1 1/2 cups filtered alkaline water
1/2 teaspoon Hawaiian sea salt
1 probiotic powder capsule, powder only
3 tablespoons RAW Irish Moss Paste

Eden Organic Apple Cider Vinegar

Tools

measuring cups and spoons
Vitamix or Blendtec Total Blender
glass jar with lid for storing

Preparation

The Cashews

Soak the cashews overnight in filtered alkaline water.

Drain the soaked cashew nuts and rinse several times until the water runs clear.

Pour the rinsed nuts into a Blendtec or Vitamix.

The Liquids

Add the lemon juice, alkaline water, vinegar, probiotic powder and Irish Moss Paste.

Start on low and increase the speed of the Blendtec or Vitamix until the contents are smooth and thick.

Stop the machine and check the thickness.

Add more filtered water if a thinner “sour cream” is desired.

The Storage

If filtered alkaline water and a probiotic is used to create the RAW Sour Cream, it will last in a large jar for at least two weeks.

Give the Raw Cashew Sour Cream a stir before using each time.

"Raw food is both more natural and more pleasant, more natural, because it is prepar’d with less toil, and being cook’d by nature itself, serves nature more adequately, to all intentions and purposes. It neigh entices men to eat till they be unable for their affairs, nor brings it sickness; it affords strength, and prolongs life."  - John Milton, Paradise Lost, 1665
