How to Cook French Lentil Beans


The Measure

Measure one cup French lentils and shake them into a white bowl, a few at a time to make sure there are no stones, dirt clods or debris among the beans.

Rinse and drain the dried lentils and pour into a heavy bottom pan with a lid and cover with cold filtered water about 2.5 inches above lentils.

HINT: French Green and Buluga Lentils take a bit more cooking time than the standard brown or red "orange" lentil.

Bring the lentils to a boil, then immediately turn the heat to simmer and use a lid to cover the pot.

Cook Time

Cook for about 30 minutes and then test for doneness. Depending on where you live, it may take 45 minutes to cook the lentils to al dente.

Once the lentils are al dente, drain the water off and recover with the lid and set aside.

The Yield

One cup cooked French Green Lentils yields 2 2/3 cups cooked lentils.
