Vegan Appetizers
Simply Nachos

Simply Nachos is a staple Quick 'N Easy Meal at the Morgan Homestead. We love Mexican flavors and with the addition of a new corn chip, Trader Joe's Tortilla Chips With An Identity Crisis, the dish is even better tasting! This is also a great meal for guests that show up at the last minute and you have nothing prepared.
Tabasco Chipotle Sauce
Yields: 2 servings

1 bag of your favorite tortilla chips
1/2 cup shredded vegan cheese
1 can organic black or pinto beans, drained & rinsed
1 ripe avocado, diced
1 bag Boca Burger Ground Burger or 2 Boca Burger Patties
Tabasco Chipotle Sauce or your favorite Mexican Sauce
Salsa de Pico
Raw Cashew Sour Cream

Trader Joe's Tortilla Chips With An Identity Crisis
Made just for Trader Joe's... a little corn, a little potato and a little brown rice. These tortilla chips are free of wheat and full of tremendous tortilla flavor.

Ingredients: stone ground whole grain corn, canola oil and/or sunflower soil and/or soybean oil, dehydrated potato, evaporated can juice, brown rice flour, sugarcane fiber, salt.
Serving Size: 10 chips
Calories Per Serving: 140
Total Fat: 7g

2 heavy bottomed skillets
can opener

Turn on the Broiler.

The Salsa

Create my Salsa de Pico or open a jar of store bought.

Peel and dice a ripe avocado and set aside.

Boca Burger
Open a frozen package of Boca Burger Ground Burger Crumbles and place in a pan sprayed with a non-stick oil spray.

Cook till defrosted, remove from heat and set aside.
I made my own vegan burger crumbles using 2 Boca Burger Patties.

HINT: If you don't have Boca Burger Ground Burger Crumbles, make your own by frying two Boca Burger Patties and then crumble them with a fork in the pan.

Organic Canned Beans
Open a can of organic black or pinto beans.

Pour the beans into a sieve and rinse under water till liquid is clear and drained.

Heat in a heavy bottomed skillet and set aside.

Tortilla Chips & Cheese
Grate the vegan cheese.

Spread a thin layer of tortilla chips over the bottom of a bowl or plate.

Sprinkle a thin layer of vegan cheese over the tortilla chips.

Place bowls under a pre-heated broiler and melt the cheese.

The Beans & Boca Burger Ground Crumbles
Combine the warm black beans and Boca Burger Crumbles and sprinkle half the portion over the each plate of broiled tortilla chips.

Add your favorite salsa and hot sauce and EAT!

Boca Chik 'N PattyHINT: An alternative to the Boca Ground Crumbles is the Boca Spicy Chik'N Patties. The flavor of these is HOT and provides an excellent alternative.

Ingredients Patty: water, soy protein concentrate, soy protein isolate, textured wheat protein (wheat gluten, wheat flour), contains less than 2% of wheat gluten, yeast extract, methyl cellulose, salt, spice (contains black pepper), natural flavor (non-meat), hydrolyzed soybean and corn protein, hydrolyzed corn gluten, onion powder, sugar, succinic acid, thiamine hydrochloride (Vitamin B1).

Ingredients Batter: water, wheat flour, yellow corn flour, salt.

Ingredients Breading: wheat flour, dextrose, salt, dried yeast, caramel color, yellow corn flour, extractives of paprika and annatto for color.

Browned in corn oil.

Serving Size: 1 patty, 160 calories
