Vegan Appetizers
Creamy Cashew Cheese
Organic cashew nuts are so tasty and smooth that you won't believe that this isn't a real cheese product. Use this vegan cheese recipe to create a festive cheese ball for a platter of crackers or spread it on bread slices to create a tapenade. My favorite is a dollop on a halved fresh organic ripe fig! <<MORE

Fresh Figs

I L-O-V-E fresh figs! And if you have never tried them, may I suggest to do it NOW! The end of summer is generally the time that markets have them available for a reasonable price. Figs provide a delicacy that is unmatched by other fruits. Its complex texture includes a chewy interior, a smooth exterior, a sweet flavor and a crunchiness from its seeds. >>MORE

Creamy Cashew Cheese Roll-Up

Flat Bread is the basis for the Creamy Cashew Cheese Roll-Up Sandwich.
Within four minutes you could be sitting down to a festive sandwich or have a magnificent lunch sandwich prepared for the office. In times of recession, it's easy to save by packing your lunch daily rather than eating out or ordering take-out. So eat like a King with this spectacular sandwich. >>MORE
Vegan Appetizers
Rosemary Garlic Almond Cheese

There may be no more satisfying way to eat nuts than to use them to create spreadable cheeses. In my pre-vegan days, I purchased store-bought spreadable cheeses to serve for parties or snacks. Alas, that taste has been hard to duplicate. While experimenting with soaked nuts, I created a cashew and an almond cheese-like creamy log and spread using vegan ingredients. No binders or additives are included and so very easy to assemble. >>MORE

Oven Roasted Beets
Don't be fooled by the dirty rough exterior of the raw beet! It is one of the most overlooked vegetables and often avoided because it was not prepared artfully. My mother used canned beets and they were MUSHY and only tasted like the vinegar they were packed in. She loved to use them in a Blackberry Jell-o recipe prepared at Thanksgiving and Christmas. I think the color and sugar made it a favorite with everyone. >>MORE

Salt and the Human Body
Commercial Table Salt vs Natural Sea & Rock Salt
Iodized Table Salt
Those little round cylindrical pour boxes of salt that we all grew up with may not be the best salt for a human to consume. After having taken care of two parents that suffered from congestive heart failure, I learned early on that salts differ and the wrong sodium intake wreaks havoc with many people immediate water retention and high blood pressure results from its use. So if you suffer from high blood pressure or other health issues, iodized table salt is not the best thing to put into your body. But don't despair, there are GOOD salts that don't produce these unwanted side effects! MORE>>

How to Cook Dried Beans
Since "How to Cook Dried Beans"is the most popular recipe page, I have updated the information. The Dried Bean Chart provides the cooking times and information about whether to soak or not soak assorted dried bean types. For those of you who have sent me ideas and information, thank you very much. I clearly love learning as much as I can about vegan cooking basics. MORE>>
Vegan Tool Review
The New Vita-Mix 5200
"The Push to Change"
After several months of experimentation and comparison, I now use the Vita-Mix-5200 Blender as my primary blender for green smoothies, nut cheese spreads, salad dressings, etc. It's not the power that convinced me, although the power is INCREDIBLE and VARIABLE. It was the PUSHER TOOL (tamper) that pushed me over the edge! The Vita-Mix Pusher allows me to press items into the blades without having to add more liquids or remove the top and press down the contents of the container. >>MORE
